The Collins Bar calls itself Birmingham's first dedicated cocktail establishment, open since 2013, and has no menu: the bartenders make every drink custom for the guest. The Infatuation's June 2026 guide calls it a no-frills dive bar serving alarmingly exceptional cocktails and iconic local hot dogs. Readers of About Town's 2026 poll put it among the finalists for Best Bar.
